Nonya or Peranakan cooking results from the blending of Chinese ingredients with Malay spices. The food is spicy and aromatic with an unique flavour with the generous usage of rempah which is a combination of pounded spices. Popular nonya specialties such as the sambal udang, popiah, kueh paiti, chap chye and assam fish are some of the many interesting dishes.

Teoh Kian Kiong Allan
Allan Teoh has published books on baking and his first book, AllanBakes-Really Good Cakes, clinched the Best Desserts Cookbook award for Singapore under the Gourmand World Cookbook Awards 2011. He was also the mentor to the winner and runner-up of the second season of Junior Masterchef Australia series when the contestants visited Singapore for a cooking demonstration in 2012. Allan was also voted as one the 2009 Heavenly King for his Cheesecake by Singapore mobile users organised by Lianhe Wanbao, Omy and Rednano. He has been teaching since January 2012.
